When I hear organized crime I think of the mafia. I would personally describe organized crime as a mafia hit. I would define it as a group of people who actually organize and plan out their crime. They figure out all the details including person, time, and place before committing the crime.

Organized crime, in my view, occurs when two or more persons form a rational, ongoing conspiracy to commit crime for reasons such as the desire to make a profit or religious and political extremism.
